Food for Thought: Broccoli is a Great Summer Vegetable

Carbon kids will tell you they eat broccoli often at school lunch. It meets the dark green component required by USDA and is the most popular choice by students.

The frozen broccoli we serve is picked and packed within four hours of harvest. It gives us fresh flavor with a good shelf life and year-round availability. When we have the opportunity, though, fresh is best. Either way fresh or frozen, we gently steam them in our new combi ovens. Preparing this way maintains the essential nutrients, al dente texture and fresh taste. It earns top marks in school nutrition.
