Food for Thought: Colorful Veggies

There is saying we like at school lunch that goes “you eat with your eyes first.” We really take presentation into account when serving our delicious meals to students. Color is a key variable in food choices and helps us decide that something looks appetizing! It also has to be manageable for all ages.

Kids may not choose a whole radish or a large green pepper wedge but, as a colorful medley incorporating several colors, a cup of veggies hits a home run with students!

Seasonally, these vegetables are pretty accessible for us. So, the real challenge comes in the form of convincing students to eat them. This eye-catching veggie cup was popular with all grade levels!
