Apricots are one of the first fruits that are ready to be enjoyed in the summer. They are most often dried or canned. In the U.S., apricots are available fresh May to August when school is out. We are benefiting from their plentiful vitamins A and C. They are also rich antioxidants like flavonoids.

Apricots are smooth and sweet but with a hint of tartness. It has been many years since we have served them in school lunch. The feedback from students is very positive so we will be serving them on a regular basis while still available!
