Los Jilbertos Cuts Ribbon on New Location

Following the destruction of the restaurant’s former location in Wellington, Los Jilbertos cut the ribbon on its new and improved location on Wednesday morning. The Carbon County Chamber of Commerce was joined by Carbon County Royalty and members of the community to celebrate the reopening of the business.

The well-loved Mexican restaurant was demolished earlier this year when a semi slid out of control on the highway, striking the establishment and sending it crumbling. Two people were inside the restaurant at the time of impact, but no major injuries were reported.

Determined to continue their legacy in Wellington, the owners of Los Jilbertos set their sights on a new location down the road. Formerly a gas station, the owners converted the new building to a restaurant and began serving customers once again on Sept. 2.

Following Wednesday’s ribbon cutting, the owners took time to thank members of the community for their love and support following the accident. They especially thanked those who helped fundraise and customers that continue to support them in their new location.

Los Jilbertos is located at 1010 West Main Street in Wellington. The business serves customers daily from 5:30 a.m. to 12 a.m.
